John - we use Camtasia and we love it. Relatively inexpensive, easy
learning curve, good technical support, and you get a high degree of
control over the finished product.

I've also heard good things about Macromedia Captivate (formerly
RoboDemo?) Now that Adobe owns Macromedia you can find info here:

The one thing I'd advise _against_ using, for this particular job, is
tools such as Microsoft LiveMeeting, Global Crossing, and WebEx. These
tools are optimized for live/synchronous training, and even though they
advertise their "record a meeting/presentation" feature - they are really
not all that robust for working with recordings and getting a polished
result. Rather, the "record" feature here is much more targeted to this
scenario: "If someone missed the meeting, they can watch it later!" -- and
that's about it. The one exception, possibly, is Macromedia Breeze, but
its cost is rather prohibitive, especially considering how affordable and
kick-butt Camtasia is.
