I haven't had that one much, but if I recall correctly last time I said something like, "I could stand to learn more about X technology." Making it clear that a) I do know *something* but b) am not guru-level so if that's what they need they're better off with someone else and c) I am interested in learning. I try to stick to professional items; my *personal* weaknesses are none of their business. :-)
