Ask them if you can review the contract before you tell them yes or no.

Always review the written contract before you give an answer and especially
before you give notice at your current job.

Don't believe it until you see it in writing. Don't forget that headhunters
get their income/bonuses/whatever by hiring people for their customers. Not
all of them are dishonest, of course, but some will tell you anything to
get you on board.

If you trust them as much as you would a greasy-used-car-sales-person-type
or a slimy-ambulance-chasing-lawyer-type you should be fine.
