Leonard:
Lots of different groups publish different standards for the symbols used on engineering drawings. One that comes to mind is the Instrument Society of America (www.isa.org). They publish about a half a dozen drawing standards for process control drawings of various types.
Some other sites to try are:
www.ieee.org
www.nist.gov
www.nssn.org
Good luck.
