I don't have Word 97 but I think my technique will work.
* Place -- wherever you want an em dash in your document
* When done creating your document, select Replace from the Edit
menu (or hit Ctrl-H)
* Enter -- in the Find What box
* Place your cursor in the Replace With box and click once. Then
click on the Special button on the bottom of the page. Select Em Dash
from the popdown menu. Something that looks like ^+ will appear in the
Replace with box.
* You can then choose Replace or Replace All and Word will replace
every (or a particular) occurrence of -- with an em dash.
