I'd like to add: teach students how to INTERVIEW subject matter experts.
This is something that was not taught in my Technical Writing classes, and
I wish that it was. Many grads assume that when they land a position as a
Technical Writer, they will be sitting in a cube and writing all day. Not
so.

Maybe an interview role-play, where the Technical Writer interviews an
unwilling subject-matter expert? ;)
