The thread on the little engine that could reminds me of another
children's story that is lost forever to Political Correctness. Does
anyone on the group remember "Little Black Sambo"?

Yes

Does anyone remember the pancake house chain of restaurants based on the story?

Yes. PC had nothing to do with it. The name changed more than 20 years ago,
before PC even existed. It was changed due to racial conotations. Most people
that saw the name of the chain hadn't even heard of the story, so its true
meaning was lost on them.
