Here, in the St. Petersburg area, there is a German immigrant who owns a
bakery. His bakery has doubled in size in less than three years because his
baked goods are somewhere between excellent and sublime. He bakes breads and
cakes, but specializes in such great German goods as brotchen, kringle,
strudle, and even Schwartzlaelder kirch Torte. When he left Germany he was a
highly paid programmer/systems analyst who baked as a hobby. Because he did not
apprentice as a baker, and did not receive Master Baker certification, he could
never have opened a bakery in Germany.
Certification, as many propose it, is a test of an individual's ability to
recall theoretical knowledge. Reality is being able to bake bread that is so
good, people kill to buy it, regardless of the baker's training and
"certification".
