I don't know about making RTF the default, but what we do here is just
open the RTF file each time to edit it after it is initially saved in
that format. When you make changes and save it, it is saved again as
RTF.

We do this mainly for creating help files. Since that is mainly what we
use Word for Windows for, I hardly ever open .DOC files anymore.
