To make agile work for you there are just a few rules:

Go to scrums
Get your issues on the board - inouts needed from people, systems, reviews,
sign-offs - all of these are stories or subtasks that are tracked
Do not let the issues get completed on the board until they are really
completed.

You can make Documentation an epic for releases ... not often done, but
possible.
