I've often taken ad-hoc work from colleagues as a way of building good working relationships as well as shameless self-promotion of how a skilled technical writer can add value. I usually tell folks that I'm willing to wedge it into my pending tasks as a back-burner item... it may be a while before I get around to it and as such, they're not entitled to nag me about it. If that isn't sufficient for them I suggest we talk to my manager to get it added as a "official" project and negotiate the priorities.
