Well, from the point of business communication and passing along a
negative message, I think "total sweetheart" is intended to soften the
blow and put the recipient of the message more at ease, so they are less
defensive. Since this suitor is a person, I would communicate with them
as a person and try to soften the blow of the negative message, too.
However, I would not use the term "sweetheart."

You'd really say "You are a total sweetheart"? Wouldn't that make the
message a little ambiguous? Here's what I imagine the obtuse geek would
hear: "You're a total sweetheart for pursuing me, blah, blah, blah,
blah, blah." And he'd think, "Excellent, she thinks I'm a total
sweetheart! Woohoo!"
