Without knowing anything more about this situation,
I'd say don't do it. If you have never had previous
correspondence with this person, you have no idea
what the real story is. And, not to disparage your
no-doubt excellent course, what are the odds that
someone is going to want to travel from Nigeria to
New York for a one-day session run by a volunteer
professional organization rather than, say, a longer
course run by an accredited educational institution?

Seems to me that you would be putting your organization
on the line for this person with US Immigration without
very much background information. If it were me, I'd
respond that your organization is unfortunately not
set up to accommodate international attendance.
