Since you are not dependent upon video hardware acceleration, Fusion is a good choice from 
what I have seen. Parallels would work as well. It would appear that you are interested in 
the seamless integration that Parallels or Fusion can provide and the flipping from one OS 
to the other without hinderance.

Remember that NTFS drives aren't writable by Mac OS X. They can be read. If you make a 
separate partition with FAT32 you can transfer files from within the programs. 

I would go with Acrobat on the Mac. I still don't trust Microsofts printer capability. 
This is the same company that produced a postscript brain-dead version of thier OS. Mac OS 
is very compatible with Postscript. Using OpenType fonts will reduce your font problems 
significantly.

There is little difference between the Office versions for Mac and Windows with the 
exception of ActiveX support and Access isn't available for the Mac. Excel, Word, and 
Outlook are compatible.

I loathe the new Office design (2007). Not much new except MS showing us how they can 
screw up a product by intentionally making the interface worse. I understand that they 
will duplicate this abortion on the Mac version.

Adobe Design will work great on the Mac.

Viso is Windows only. And I find it to be particularly nasty anyway. ConceptDraw is a Mac 
competitor and works similarly. It can import the Viso .vdx file format and can export XML 
to Viso. Gee, an open formatting language that works!

Your performance using Parallels or Fusion should be comparable to using Bootcamp. I 
normally use Bootcamp, but I need the video hardware acceleration.
