I cannot agree enough with this point.

I've recently been doing a few flash demos for our product; part
marketing demo, part here's-how-the-system-works training introduction.
What I've found is that the smallest changes to the system now require
the demo to be updated.

A change to the way the logo is presented, or to the product colour
scheme, for example, might require the author of printed documentation
to change a few screen shots. The author of video documentation,
however, is going to have to change every single frame of every single
video.

And translation issues could be fun, too.

Video has its place, but the immense maintenance overhead means that
that place should be kept as small as possible!
