Thank you Milan for bringing up this topic. I think I understand the underlying problem: How can we find out the restrictive holidays of faiths--in any area? Someone might have a calendar listing holdays, but not know whether a date is restrictive.
For instance, Ken listed two Jewish holidays that prohibit travel and work, but there are several more of which most non-Jews are unaware. And then you have to account for local traditions which may or may not pertain to religion, but are likley to interfere (e.g., the previously mentioned St. Parick's parade).
There is also the consideration that you can't please all the people all the time. No matter what dates you choose, you may cause a problem for somebody somewhere. This could be a matter of religious orthodoxy, a family event (parents' fiftieth anniversary party, child's college graduation, you name it...), a personal illness, whatever.
You may also find that, despite your best effort to select a good date, one of your hoped-for speakers has a conflict. That happens all the time.
The best you can hope to do is accommodate the great majority of your potential attendees, organization officers, and invited speakers. Then accommodate the others with a Web simulcast (budget permitting), a videotape or audiotape of the sessions, or at least a printed proceedings.
That's why everyone is suggesting that you consider the likely audience, assess (perhaps intutitively rather than by actual survey) which major religious groups are involved, and then give it your best shot on that basis. Otherwise, nobody would ever be able to schedule anything.
