Have you tried creating a pdf directly from Excel? You don't mention this in your question.
Installing Acrobat should have resulted in an Adobe PDF menu in Excel where you can change
conversion setting and create pdfs, even from  complete workbooks.
I don't know what you mean by editable, but at least with Acrobat 6 you can use the text selection
tool in the pdf.
