This discussion is probably just pushing my "irate manager"
button, but when I hear it real-time, it's usually coming
from a bunch of writers sitting around a table arguing over
formatting instead of getting their hands on product and
creating content, or worse, holding up the completion of a
doc set whose product is ready to ship. Sorry, but "on
time" and "meets content objectives" trumps "looks more
professional" most every time. Unless the doc looks as
if it was written by a 6th grade dropout, it ships by
deadline.

You are right, nobody notices overtly. A better test would be to show a few
pages of text written with proper em/en dashes, and another sample with
hyphens instead of em/en dashes - then ask them which sample looks more
professional.
