Look at the person's portfolio and the resume. If the resume is full of
relatively short gigs of 6 months to a year, and the portfolio covers a wide
range of subjects that aren't related to each other, yet require technical
understanding, then chances are the person can pick stuff up at a decent
speed.

I would assess this in other ways: asking the person how do they pick up new subjects for instance. If they hem and haw, often they do not have strategies for learning new things. Typically a quick study perks up at this question, comes up with several examples of how they would handle a new project... for me the answer is not so much the point of this question as is the enthusiasm. I would expect most quick learners to come up with more than one idea or example for getting info: interviewing, looking for written materials, looking at prototypes, etc. And I would expect most quick learners will look a little keen when they are talking about these things, because quick learners typically like the challenge of gleaning info out....
