Gutter should be left to the production process as part of page imposition.
Gutter as I understand it is not a set amount. It is variable and grows or
shrinks depending on the page position in the binding.
Find a printer that uses proper imposition tools. Otherwise you're just looking
for a 'worst case' margin.
