I appreciate your sentiment. However, I would be slow to judge a company
by an interview. HR departments are often a separate reality from the
rest of the company. With some small companies, HR may even be
contracted to someone who comes in a couple of times a week.

Anyway, it's hard to get a sense of a company from an interview (or for
the company to get a sense of you, for that matter). The one part that
might give you a sense is if you get a tour of the office. Not that you
are actually likely to see thumbscrews and whips on the wall, but
observing the office layout and how people interact can tell you more
than the interview can.
