I always warn people that since I don't drink the stuff, they are taking their lives in their own hands by having me make it. On the occasions that I still get stuck with the task, I just double the coffee or halve the water. When anyone asks, I (truthfully) say "My parents always liked strong coffee, since I don't drink it here, I didn't know how strong you wanted it."

(This has gotten me out of ever making it again at those places I have done it.)
