I worked on one of those products years ago, you have my sympathies.

What I did was create a section that listed all the 3rd party software and
what needed to be changed from the standard install. I did not document the
installation of the 3rd party software, but assumed the user installed it
correctly.

I think you're on the right track. You shouldn't be responsible for
documenting 3rd party stuff, only the changes that are required by your
product.
