Megan, from my experience most companies are pretty understanding that you want
to show your wares to other componies. I have never had a company say "no." Most
of the time, by the time I'm done with the contract the work isn't proprietary
anymore because its been sold to consumers, so keep that in mind for yourself.

The only glitch I've ever run into was 1) when I started tech writing and had to
create a sample of a help project to show I could do the job, and 2) working for
the government with security clearance. And in the second situation I just told
companies afterwards that I signed a security clearance and couldn't show
anything for 3 years. You may not have a sample for a particular job, but you
still can describe in great detail your project.
