Beth,
I thought that option was for telling Word that when you are typing a
document and changing a bullet style for example, it would update "Bullet"
style with the change you just made, as opposed to the entire template
styles being overwritten by Word's defaults when you open a customized
document.
Is that different from this?

It doesn't insist unless you tell it to insist. In Word 97, go to
Tools|Templates and Add-ins. I bet you'll find that "Automatically update
document styles" is checked. Uncheck it. Change your styles back one last
time. Save the document. Voila!
If new documents are created that way, you'll need to change that option in
the template itself.
