In the past, I have used the opposite process to you - copy the files from the server to my computer in the morning, work on them through the day, then copy them back at the end of the day. It's just too annoying when you're working on a file across the network and you lose the server connection. Depending upon your OS and application, you can lose your file or crash your computer. Then, you can't continue working on the file until the network or server is back up. Even then, sometimes the file would be corrupted. At least if they're on your local machine, you can't be stuffed around by outside influences. Speed was also an issue for me, but it doesn't sound like it for you.

Have you asked the people why they work that way? There could be a valid reason, or they may have ungrounded fears you could dispel.
