You haven't said which platform you're using, but if you're on a Mac, you
can open the files in a program called TexEdit Plus
(http://members.aol.com/tombb). This program has a handy command called
Quick Modify that contains options to remove carriage returns, line
feeds, or both in a (mostly) intelligent way. On a 500+ page document you
might have to wait a while, but it's the computer doing the tedious part,
not you.

The more-powerful among the ASCII text editors on both platforms also
have features like this... check out TextPad (http://www.textpad.com) on
Windows. TextPad has features to save files as Mac, UNIX, or DOS text,
stripping and adding CR/LF as needed.

Hope this helps.
