I always keep copies of my documents for my portfolio. - maybe not
everything from a particular company, but at least several examples. It is
not always easy to get completed manuals (bound, etc.), but I do at least
hang on to preliminary drafts in Word, FrameMaker, whatever.
I do show them to prospective employers, but only when asked, and I never
let the whole document out of my sight. I have had employers ask to copy
them (or even to keep my copies), but I just tell them the documents are
proprietary information from my current employer and sorry, but I can't let
them have them.
If the employer insists they must have something to show someone higher up,
I will copy a few pages of my documents and mail them them to the employer,
but I always make sure those pages contain very generic and non-sensitive
information. This protects both my current employer and assures the
prospective employer that I can be trusted with confidential documents.
