I've been working in technical publications for 20 years now. I've seen it
called many things with the two most common being:
1. vertical bar
2. pipe
In the context of programming (file layouts, delimiters, pushing output to
another process, etc.) it's commonly called the "pipe." Some file layouts
use the pipe to delimit the fields in a record. And, you can "pipe" (used
as a verb) the output from a DOS command to another command, as in DIR *.*
| MORE.
In nearly all other contexts, it's commonly called the vertical bar.
