Yet the publishing industry has always assumed that all work (no matter
how short or how long) needs to be edited and proofread. Some of this
work is even more "important" than a resume, yet the writers do not
seem to be able to be pressed into perfection by the weight of their
burden.

2. You're apparently misunderstanding my point. Let me phrase it this
way:
If your resume is full of typos, grammatical errors, etc., chances are
that the documents you are going to write for me will
mirror your resume. At least I think so. I am not saying
that we don't need proofreaders and editors. In fact, the
larger a document, the greater the likelyhood of it containing
errors.

I guess I have too much self respect. I would proofread my (one page) resume
over and over again and make sure it's perfect. I wouldn't send out a resume
with typos, just as I wouldn't go to an interview with mascara smeared on my
blouse.
