I really and truly do not like using "Hand-Holding" as an option in
the dialog, but for the life of me can't think of anything better.
Does anyone have any suggestions?

I'm not sure of the context here but how about "Assist" or "Assistant"? Some
programming languages out there offer an Assist mode that help "new"
programmers "do" the work.
