Need help with Word indexing

It's been ages since I've had to index a long-ish (300+ page) print book in
MS Word, and things have changed in the interim. The Help is great for
tables of contents, but there's little on indexes. I've consulted WikiHow,
too,and that's been of some use, but it doesn't address more than the
basics. I'm running Windows 365 on a Mac. All software is up to date.

Here's what I'm trying to do:

1. Insert index markers in the text using permuted entries when
appropriate. Simple entries work fine, but it seems that I need to make a
second entry in the same place for a permuted entry.
2. Edit index markers that I've already entered.
3. For a given marked index entry, combine page references for the same
term in the generated index. For example, "tomato, 3,24,67" instead of
having separate index entries for each page. Word used to do this, but this
version doesn't seem to do it.

No problem generating the index and putting it into the book where it
belongs (at the end).
