Note taking ap or application

Good afternoon, everyone...hope you are playing it safe.

Looking for a recommendation...

I have a Dell touch screen tablet running Windows 10.

I'd like to find an application that will allow me to draw and write on the
screen, then perform character recognition on the text and save the images
I draw to some kind of png, gif, or jpeg.

While price is no object, obviously, price will be a consideration.
What'cha guys using?
