Following the Microsoft style guide, I wouldn't call them anything.
With check boxes, I'd say "Check <b><label></b>." With switches, I'd
say "Set <b><label></b> on" or "turn on <b><label></b>."

Actually, in my current job, I usually say enable / disable or
something similarly generic, since the user might be editing a
property value in the UI, where it's an on/off switch, or in code,
where it's True or False.
