Unlike UNIX, Linux, and similar, as you know Windows by default has no virtual desktops. There are many different programs out there which offer this functionality, however. Here are two:

Microsoft PowerToys has one at http://www.microsoft.com/windowsxp/downloads/powertoys/xppowertoys.mspx

Another good option, also free: http://virtuawin.sourceforge.net/

The second one looks particularly interesting as it offers all sorts of enhancements that you may find very worthwhile; it also supports XP as well as Win 7.

However, for organization purposes, I might still be in the market for a good virtual-desktop app. Currently using Windows XP Pro. Expect to be switched over to Windows 7 around year-end.
