Check the Proofing Options. I got there by opening the Spell Check and clicking Options; there may be a more direct way. Make sure Check Spelling As You Type is checked, and that Hide Spelling Errors in this Document (in Exceptions for the current document) is not checked.
If all of this is OK, and you still have the problem, select all text, open Language again, and click English US (or the appropriate language setting).

Subject: Word 2007 woes, no red underlining
I have checked all over the Help and Google'd the question, but I cannot find out how to turn ON the red underlining for a misspelled word. I have tried all of the suggestions that I found, to no avail. I was forced by IT to upgrade and it has been awful to relearn things, let alone find out why Spell Checking is not underlining misspelled words like it used to.
The "Do not check spelling" box is clear in the language dialog.
