I'm sure you already have them agreeing to several formal reviews and client
sign-off accepting the project when it is complete. I'm not a lawyer, but
the sign-off indicates acceptance and thus responsibility of the content. If
not, then maybe they are willing to pay for your liability insurance. If
they don't, then you really have to think about whether this could lead to
bigger things, or bigger headaches.

My gut feeling is if they agree to support your project, why are they afraid
of accepting the content.
