I was going to go with "because eventually a SME will want to cram more
information than should be in a table into a table when you're on a
tight deadline" - which is pretty much the same thing.

For manuals that go through the process of actually being printed on
paper, I've used "smaller text in tables" as another way to try and cut
down the page count or manage the flow. Smaller text in just the tables
at least looks a lot better that different styles of body text (which I
have never done, but sadly I have seen).
