I would have to agree with John. "Select" comprises all the different
methods used to do the choosing. And trying to channel your users down a
particular path with the use of the word "touch" doesn't make me want to
change my opinion (mostly because said channeling is unlikely to be very
effective).

instances you are still selecting. You either select or you enter.
Select for anything that you pick and enter for anything where you type.
