My experience has been the opposite of Greg's, though I can understand
why he finds the dual setup annoying. I can't imagine going back to a
single monitor. Heck, I'd like to try three monitors sometime!

I document software, so I often have the application open "on the side"
and the software I'm using to write the doc is open on the monitor in
front of me. I can glance over to see what's happening with the
application and continue writing at the same time.

It's great when I have an SME in my office. The SME can show me
something on one screen while I take notes at the same time using the
other monitor.

At other times I'll have my e-mail and IM windows open on the "side"
monitor while I work.

The dual monitors definitely increase my productivity.
