Hello John,
I'm not sure which version of Acrobat you are using, but the following
has worked for me in Acrobat 8 Professional:
1. Go to Advanced > Print Production > Convert Colors. (Back in Acrobat
7 I think that option was located in the Tools menu instead.)
2. For Action select "Convert", for Profile select a grayscale profile
such as Gray Gamma 2.2.
