Not sure about YouTube, though I like it.

Here's a link to all Word 2003 demos (if it doesn't time out):
http://office.microsoft.com/en-us/word/CH011218821033.aspx

Might find other items on that site such as
http://office.microsoft.com/en-us/word/FX100649261033.aspx?CTT=96&Origin=CL1
00636481033.

Disclaimer: I worked there for 8.5 years (6 years perm employee).

Why isn't easier to search for this stuff: I don't know.

What will make it easier to search for this stuff: One thing that will help
is everyone complaining about it to their Web site so that they know what
you want.

Is there a Youtube-like site that's got quick video lessons on doing
things like creating hanging indents in Word? I want to refer my
students to instructions and thought perhaps a video would be easier.

I figured someone would have whipped up some Camtasia or Flash
instructions somewhere...
