Anthony,

If you resigned, you voluntarily left the job, so you wouldn't qualify for
unemployment. I don't think, unless you can prove coercion. However, you
stated that you consciously chose the money, so I don't see how you can now
say they coerced you into signing the letter. 

You should simply tell the unemployment office exactly what happened. Maybe
there's a way that they can help you. Don't hold back anything from them.
They are there to help you.
