Re: meeting minutes--
Things that help are: learning to write fast :) (and coming up with some of your own short hand), having a good memory, and the ability to separate the wheat from the chaff.
And I would add to this list, writing up the minutes as soon as possible after the meeting. The sooner you do, the better your memory will be at filling in any gaps in your notes.
