That changes the picture entirely. The bold information is what changes from instance to instance and therefore is what the user is interested in. The labels are basically just guide posts in case the user momentarily forgets whether the home phone number is before or after the work phone number. So the labels will just fade into the unseen background most of the time.

This is entirely different from the situation where you want to tell the person completing a form, Hey Dummy, this field is required, dammit. In that situation, you bold the labels. But in your present situation, I think it's perfectly reasonable to bold the variable field contents.
