If I understand you correctly, you spent approx an hour talking
face-to-face to gather the information and then turned that into the
first chapter of the book.
The question of money is, essentially, higher rate or lower rate + part
of profits and you think that the book could be profitable - right? If
this is the case then there's one other possible scenario you might want
to consider - depending on your view of the risk and current financial
status.
Have you considered not charging him at all? Simply interview him,
collect the information and produce the book yourself (with his name on
it). If the book sells then you take a higher cut than him from the
profits, or take out you 'costs' before splitting any additional
profits.
You get to do the book (and hopefully your profit) and he gets the book
for his shelf. Not sure how feasible this idea is but, if nothing else,
suggesting it should show that you think the book is a feasible project
and you're not just massaging his ego to get work.
