I recommend:

1 week to research the product/technology; including compiling a folder of all of the existing documents and information.

2 weeks to write the first draft.

1 week to copy edit yourself and create the index while the SMEs review and mark up your draft.

1 week to integrate all of their comments and document any changes.

Take the last week to ensure it is up to date, create the publishable version, publish and send out this final version and so forth. Do you documentation management and archiving tasks as well.
