Typeface for Callout Boxes?

Your call. If you routinely use a different typeface in labeling 
figures (e.g., a sans serif), then it makes sense to use that same 
typeface in callout boxes too for the sake of consistency. So long as 
it's legible, it shouldn't matter much; a decent layout will clearly 
separate the callout boxes from the surrounding text, so any additional 
typographic distinctions are a matter of style, not necessity.

Recognition, yes; readability, no. Readability is a function of 
legibility (a font and layout issue) and clarity of wording.
