It doesn't appear to just yet as it is not listed among the preferences. But the software is beta, so that feature may very well be soon in coming. It seems like a requirement with any software that implements auto update functionality. Just as Windows Update, all Adobe automatic update enabled software (that I've seen so far anyway), and current Office products allow you to disable or tailor automatic updating, I strongly suspect that Google Desktop will as well.

I've been using Google Desktop since it came out and have found it incredibly useful. Since my Outlook mailbox is so gargantuan it's a godsend for that alone. Since you're concerned about privacy and data retrieval, wait a bit and see how it all pans out. I think it'll be worth the wait.
