Seems like a possibility. I'd first politely state my incredulity that
such unsuitable software was being used to create on-line help, writing
user manuals, or designing process flows. Then I'd state my willingness to
participate in any test they require, if their reaction to the previous
discussion was adequate and their work procedures seems sane enough that
you want to work there. But I'd require a sample of company documentation
produced in Excel before taking any test.
